I’m probably totally late to this train but overnight chia bowls have become an every day fave of mine for breakfast. I was finding myself skipping breakfast and and then binge eating later in the day on stuff that wasn’t even good for me and then feeling sick. It was totally because I have so many food limitations and breakfast is always the hardest and my mornings are always so busy, I’m always last on my list to feed. I know terrible haha. I found a solution though, when I take the 3 minutes to whip up these chia bowls it saves me from that unhealthy cycle. I have even thrown them in my purse and taken them to Cocos gymnastics to eat once I sit down.

They are easy, healthy, convenient and so darn delish.

Prep time: 3-5 mins

Cook time:  0

Chill time: Overnight

Total time: 3 mins

Makes:   3 mini jars

Ingredients:

Directions

  1. Mix up the coconut milk to get rid of any clumps
  2. Add the chia seeds and mix well
  3. Add the dash of pure vanilla
  4. mix up and fill the mini mason jars 3/4 of the way
  5. Add a scoop of Almond butter if you choose too
  6. Top with berries or fruit of your choice
  7. Sprinkle on the toppings – shredded coconut, cinnamon, ginger
  8. Place in fridge overnight..
  9. Enjoy for breakfast!
