I’m probably totally late to this train but overnight chia bowls have become an every day fave of mine for breakfast. I was finding myself skipping breakfast and and then binge eating later in the day on stuff that wasn’t even good for me and then feeling sick. It was totally because I have so many food limitations and breakfast is always the hardest and my mornings are always so busy, I’m always last on my list to feed. I know terrible haha. I found a solution though, when I take the 3 minutes to whip up these chia bowls it saves me from that unhealthy cycle. I have even thrown them in my purse and taken them to Cocos gymnastics to eat once I sit down.
They are easy, healthy, convenient and so darn delish.

Total time: 3 mins
Makes: 3 mini jars
Ingredients:
- Fruit
- 1 Can of coconut milk
- dash of vanilla
- 6 Tablespoons on chia
- Almond butter – optional
- Shredded unsweetened coconut – option
- Cinnamon, ginger or other yummy spices
Directions
- Mix up the coconut milk to get rid of any clumps
- Add the chia seeds and mix well
- Add the dash of pure vanilla
- mix up and fill the mini mason jars 3/4 of the way
- Add a scoop of Almond butter if you choose too
- Top with berries or fruit of your choice
- Sprinkle on the toppings – shredded coconut, cinnamon, ginger
- Place in fridge overnight..
- Enjoy for breakfast!
