Fall is here, get ready for all things pumpkin. I was totally craving this chili recipe I made a few months ago and seriously forgot how incredible it was. Its so easy. (like a one pot wonder kind of meal) and sooo darn tasty. The texture, consistency and sweet flavour is seriously so amazing. You are going to love it.

Total time: 36 mins
Makes: 6 servings
Ingredients:
- 2 Carrot
- 1 onion
- 2 celery stalks
- 3 garlic cloves
- 1 cup of dry red lentils
- 1 cup of dry quinoa
- 1 can 19oz black beans
- 1 can 19oz pumpkin puree
- 3 cups of veggie broth (I use my own with no sodium)
- 1 tsp olive oil
- 1 Tbsp chili powder
- 1/3 Tbsp smoked paprika
* If you have other veggies that you’d like to add, take out one carrot and one stick of celery and add in peppers, green beans etc.
You can garnish with fresh avocado and cilantro!
Directions:
- Chop onion, garlic and veg and satuee in a pot until onion becomes transparent
- add in all other ingredients
- Bring to a boil and them turn to simmer
- Stir well every 10 mins and let cook for 30 mins
- If the consistency is too thick for you – add some more broth.
- Enjoy – it really is that easy.
