We’ve been making this soup for months now I just never took the time to blog the recipe. What better time than now when we are all locked up in isolation trying to keep healthy. This recipe is super simple, hearty and very versatile, meaning you can really make it what you want with what you have. The recipe I share below is as easy as it comes though.

Cook time: 30 mins
Total time: 37 mins
Makes: 6 servings
Ingredients:
- 2 cups of homemade vegetable broth (no soduim)
- 1 can of full fat coconut milk
- 2 cups of frozen peas and carrots
- 1 small white onion
- 2 cups of baby red potatoes
- 2-3 cloves of garlic
- 2-3 Tablespoons of dried thyme, rosemary, basil, oregano. (I use a blend and its wonderful)
- 2 boiled chicken breasts
- 2 Tablespoons of olive oil
Directions:
- Start by boiling your chicken in a pot of water.
- In another large pot add your chopped garlic, onion and olive oil and let simmer for 3-5 mins
- Add in the potatoes and frozen peas and carrots. Let them warm for another 5 mins
- Add in the spices and coat the vegetables
- Take fully cooked chicken out of the pot and cut it up into chunks, add the chunks to the pot and stirs well.
- Add the can off coconut milk and lets simmer for 5-10 minutes until potatoes are fully cooked.
- Add a dash of salt and pepper if needed and enjoy!
A few ways to adjust this recipe:
- Sub the chicken for chickpeas
- add other vegetables
- Remove the potatoes
