I know that is a bold statement but I do promise if you make these bad boys you will agree they are the best chocolate chip cookie you will ever eat. The texture, consistency, taste…oh my they are epic. 1 bowl – 8 ingredients and 12 minutes in the oven and your world will rock.

Total time: 18 mins
Makes: 8 cookies
Ingredients:
- 2 cups of Almond Flour
- 1/4 cup of agave
- 2 Tablespoons of melted coconut oil
- 1 flax egg (1 Tablespoon flax meal mixed with 2.5 Tablespoons of water)
- 1/4 teaspoon of salt
- 2 teaspoons of pure vanilla extract
- 1/2 cup of dairy free chocolate chips
- 1/2 teaspoon baking soda
Directions:
- Mix your flax egg and let it sit
- Mix all of the other ingredients into a bowl – no particular order
- Add the flax egg and mix well
- Fold in the chocolate chips
- Roll into little 1 inch balls and flatten them with a fork – they will not rise or expand to flattening them a little will help the centre cook better than if you leave it a ball.
- Bake at 350 for 12 minutes on the middle rack until they are golden around the edges
- Remove them from the oven and tansfer them to a cooling rack – they will be soft but harden a bit as they cool
