Tis the season for all things pumpkin. These simple and super healthy cookies are actually good enough for breakfast. The taste and texture are totally on point.

Makes: 8-10 cookies
Ingredients:
- 1 cup gluten free oats
- 1/2 cup of unsweetened shredded coconut
- 1/4 cup chia seeds
- 1/2 cup pumpkin puree
- 1/4 cup agave or maple syrup
- 1/4 cup almond butter
- 1 Tbsp pumpkin pie spice
- 1 tsp sea salt
- 1 tsp vanilla extract
- 1/4 cup vegan chocolate chips (you can also do pecans, or mix a bit of both)
Directions:
- Combine all dry ingredients (except chocolate chips and pecans) and mix well.
- Add in all the wet ingredients and stir until dough is sticky and mixed well.
- Roll into little balls and place on baking sheet lined with parchment paper.
- Press to flatten slightly and bake for 15 mins at 350.
