Tis the season for all things pumpkin. These simple and super healthy cookies are actually good enough for breakfast. The taste and texture are totally on point.

Prep time: 10 mins

Cook time:  15 mins

Total time: 25 mins

Makes:  8-10 cookies

Ingredients:

Directions:

  1. Combine all dry ingredients (except chocolate chips and pecans) and mix well.
  2. Add in all the wet ingredients and stir until dough is sticky and mixed well.
  3. Roll into little balls and place on baking sheet lined with parchment paper.
  4. Press to flatten slightly and bake for 15 mins at 350.
  5. Enjoy!
