Bars are an essential in our house, we are always looking for quick and healthy snack for us and the kids. We’re lucky to have no allergies to nuts in this house but sadly these bars aren’t school friendly. They are super easy to make, quick, and so delicious.

Makes: 9 bars
Ingredients:
- 1/2 cup creamy almond butter
- 1.5 Tablespoons coconut oil
- 3 Tablespoons of raw honey
- 1 teaspoon vanilla extract
- 1.5 teaspoon cinnamon
- 1/3 cup flaxseed meal
- 1 Tablespoon chia seeds
- 1/2 cup gluten free oats
- 1/3 cup roasted almonds roughly chopped
- 1/4 cup unsweetened shredded coconut
Topping:
- 2 Tablespoons of roasted almonds roughly chopped
- 2 Tablespoons of vegan chocolate chips
- 1/2 teaspoon of coconut oil
Directions:
- Melt the almond butter, coconut oil, honey and vanilla in a saucepan on low heat. Make sure to stir continuously so it doesn’t burn to the bottom or stick.
- Remove from heat and add in the all the dry ingredients. Cinnamon, flax, chia, oats, almonds and coconut and mix well.
- line a loaf pan so you can easily pull them out when they are hard.
- Pour mixture into a loaf pan and press down firmly so they are tightly packed into the bottom from side to side, edge to edge.
- Make the topping by melting the vegan chocolate and oil in a double boiler. If you don’t have a double boiler you can simply put a saucepan in a frying pan with water in the frying pan. Melt and mix up.
- Drizzle the chocolate mixture over top of the bars and sprinkle with the rest of the almonds.
- Place the bars in the fridge to cool for 20 minutes
- Cut them into bars and store in the fridge for up to 7 days.
