Ok ok you asked and here it is. I did a poll on my Instagram to see who would want the recipe for my no bake Almond Coconut bars and it was a unanimous YES! I get it, they are truly a household favourite over here and never last long when we make them. They’re super easy to make, healthy and so darn delish. So here it is…enjoy, they’re dairy free, refined sugar free (not sugar quite sugar free) and gluten free!

Total time: 20 mins
Makes: Depends on how big you cut your bars or squares.
Ingredients:
- 1/2 cup of shredded unsweetened coconut
- 1/2 unsweetened coconut flakes
- 1/4 cup of Agave (you can also use honey or maple syrup)
- A handful of shaved almonds
- 1/2 cup almond flour
- 1/2 cup of almond butter
- 1/2 coconut oil
- Dash of sea salt
- 1 tsp of vanilla
- (when I remember I also like to add 1 Tbsp of chia seeds. I’m sure you could get creative and add other things to it as well)
Topping
- 3 tbsp of coconut oil
- 1 tbsp of agave
- 6 tbsp of vegan mini chocolate chips
Directions:
- Mix all the ingredients into a bowl and stir well
- Take a 9×9 baking dish and pour the batter into the pan.
- Press down so it meets all corners and sides
- Mix ingredients of topping into a pot. Melt on low heat continuously stirring
- Pour topping over the entire pan making sure it meets edge to edge corner to corner
- Put in the fridge to harden for 10 – 15 mins
- Cut into bars or squares and ENJOY!
