Ok, did you eat Pop-Tarts when you were little? I was grocery shopping the other day and grabbing my kids Eggo’s and of course I saw the Pop-Tarts. I went to grab them and then stopped myself. I had no interest in them getting hooked on Pop-Tarts. 33g of sugar in one Pop-Tart, imagine starting your day that way? NO THANK YOU! As a kid though I do remember how good they were and how fun they were too eat. So I got thinking and what came next was the best healthy Pop-Tarts ever!!
I filled most of them with sugar free jam, but of course Coco insisted on some chocolate ones, so I did a few with Nutella in them for her.
The icing – well let’s just say I had a hard time finding a healthy frosting type icing so its basically just organic icing sugar and water. I coloured it with a slight pink by squishing strawberries and using their juice. I think next time I would have used beet juice so it was a bit darker.
Another, lesson I also learnt, I had two sizes or cookie cutters, you can see if the pics below. I would have cut small hearts for the bottom and the larger one for the top so I could have put more filling in each one and created more of a dome.
Otherwise, these little gems were a huge hit, so easy to make, and we all loved them so much, especially the kids when they discovered the surprise inside! I hope you enjoy them as much as we did. Pls tag me if you do happen to make them, I would love to hear what you think.

Ingredients:
The Crusty Dough:
- 3 cups of Almond Flour
- 4 Tbsp of Agave
- 2 Tbsp water
The Icing/frosting:
- 1 Cup Icing Sugar
- 4 tsp of water
- 1/4 tsp vanilla extract
- juice from squished strawberry’s to colour
Inside:
- Sugar Free Jam
- Nutella
Directions:
- Mix the dough together. You will need to get your hands dirty and really work it all in so its not too dry.
- Garb a chunk of dough and roll it out on some parchment paper. Use your cookie cutters to make some of the hearts or whatever shape you choose to use.
- fill one side with the filling, and then put the top on. Once the top is on, use a fork to seal them together
- If the dough gets dry or cracks, simply add a drop or water or wet your hands to keep it moist.
- Once they are all filled up, slide the parchment onto a cookie sheet.
- Back for 10 mins at 400 on the middle rack, and then turn it down to 325 and bake another 10 mins or until edges are golden brown.
- Let them cool completely on a cooling rack.
- Mix up the icing and smooth with a spoon over the tops of the Pop-Tarts
- Add the sprinkle and let the icing set.
